Our homemade chocolate basque cheesecake is traditionally baked at a very high temperature to give it a slightly burnt surface. We make ours with 66% Valrhona Caraibe chocolate and infused with orange zest. It has a New York cheesecake texture around the edge and is gooey in the middle. Serves approx. 10-12 people.
